Product Characteristics Because matcha is a fine powder, it is susceptible to light, oxygen, humidity, heat, and surrounding odors, causing its color (green) to fade and its flavor to deteriorate quickly. The key to preserving its quality is "light-blocking," "airtight," "low temperature and humidity," and an "odor-free environment."
Appropriate Container An opaque, airtight container (screw-top can with an inner lid) is recommended. Handle it quickly to avoid letting too much outside air in when opening and closing, and never put damp chashaku or spoons inside. If you prepare a separate "working can" (approx. 20-30g) to transfer only the amount you need, you can minimize the deterioration of the main can.
Temperature / Humidity Unopened: Refrigeration (5-10°C) is standard. Freezing is also possible for long-term storage.
After Opening: Refrigerated storage is safe. If you open it immediately after taking it out, condensation can cause the powder to become damp, so keep it sealed at room temperature for 1-2 hours and open it only after the can's surface temperature has reached room temperature.
Humidity: Low humidity (ideally below 60%). Since odors are easily transferred in the refrigerator, implement odor countermeasures such as double sealing (aluminum bag + can) or zip-lock bag + can. Avoid placing it near strongly scented foods (pickles, spices, etc.).
Best Before It is best to consume within 10-14 days after opening, and definitely within 3-4 weeks. For bulk purchases, divide the matcha into smaller portions, only taking out the working can, and keep the rest sealed and refrigerated (or frozen). When using frozen portions, be sure to avoid condensation (open only after returning to room temperature).
